Baked Halibut with Cherry Tomatoes, Olives and Calabrian Peppers

A one-pan dish bursting with Italian flavors, featuring tender halibut fillets roasted with cherry tomatoes, Castelvetrano olives, and spicy Calabrian peppers. This easy, vibrant meal is finished with a splash of white wine and fresh herbs for a truly savory experience!

INGREDIENTS

• 4 Alaska halibut fillets
• Cherry/grape tomatoes
• 1/2 cup castelvetrano olives
• 1 whole red onion
• 1 tablespoon calabrese peppers
• 1/4 cup olive oil
• 1 teaspoon oregano
• 3-4 sprigs of thyme
• 3 garlic cloves, crushed
• 2 teaspoons salt and back pepper, to taste
• 1/4 cup white wine
• Grilled lemon
• Basil leaves for garnish

DIRECTIONS

Step 1: Preheat oven to 450F.

Step 2: Add tomatoes, sliced spring red onion, garlic, oregano, olive oil, Calabrian chili pepper, salt and pepper to a baking dish and mix well; roast for about 20 minutes.

Step 3: Once veggies have softened in the oven, add wine; season Halibut filets with olive oil, salt and pepper and nest them into the veggies.

Step 4: Roast for another 12 minutes until bubbly and enjoy with some lemon.
